Grain of the Silo, located at Peppers Silo  is a vibrant award winning and animated food and beverage offering. Holding an Australian Good Food Guide Chefs Hat Grain is a leading restaurant in the Launceston food scene. Recently awarded one of the best regional city in Australia, designated a UNESCO Creative City of Gastronomy, Launceston has a lot to offer. 

We have an opportunity for an energetic and passionate experienced Sous Chef to join our award winning team. Reporting to the Head Chef you will be responsible for leading a section or controlling the pass. Our connection to local growers and producers is core to our success and we celebrate the wonderful produce by executing high culinary standards.

Within this position:

  • You will be integral in setting the overall culture in the brigade and share a passion for excellence in guest service, leadership and connection to community
  • Participate in prep and production areas of the kitchen with passion, enthusiasm and creative flair to ensure outstanding service, quality and efficiency
  • Providing supervision and guidance to junior Chefs supporting the on boarding and ongoing development of junior kitchen team members ensuring to create an inclusive, high performing culture in line with Company values
  • Support the Executive Chef with seasonal Menu creation ensuring we remain authentic to the direction of the restaurant whilst managing food costs
  • Assist with administrative elements of the department including but not limited to rostering, stock take, ordering and end of month reporting
  • Ensure compliance with food safety, hygiene, HACCP and workplace health and safety legislation and regulation
  • About You:

  • You are most excited when using local produce to create amazing food memories for our guests and thrive when designing a menu that showcases the best of the region.
  • You are reliable, level headed and able to think outside the box.
  • Formal qualifications in Commercial Cookery (or equivalent)
  • Strong career history with minimum 2 years’ experience in a leadership role within the kitchen.
  • A confident and creative cooking style with a strong emphasis on quality and presentation
  • A flexible approach in adapting to guest requests
  • Strong time management skills, impeccable attention to detail and the ability to work well under pressure
  • Well versed in HACCP and food, safety and hygiene legislation
