Bring your passion for food and quality and utilise your skills embracing a unique environment as a Chef Supervisor at HMAS Penguin (Balmoral) Join the team in this full time role and receive full training and support while working with a dynamic and fun team.

The Position:

  • Monday – Friday with no late nights, minimum weekends
  • Hands on role – lead the catering team in all aspects of the kitchen
  • Collaborate with your team to deliver a premium experience across daily mess meals and events
  • Maintain all catering and stock controls, OH&S compliance and HACCP with a strong focus on waste reduction and take responsibility of ordering and stock control
  • Drive exceptional food safety and quality with a focus on allergen and dietary requirements
  • High level knowledge and experience of operational and financial performances of the defence business

The Person:

  • Certificate 3 in Commercial Cookery
  • 3+ years displayed experience in a comparable venue including multi-venue catering
  • A proven ability to deliver a range of menus including canapes, plated dinners, buffets, corporate meetings, and themed special events
  • High level knowledge in HACCP, allergen management and food safety
  • Experience working on high-end client functions while being comfortable working under pressure and to tight deadlines.
