JOB DESCRIPTION

Sofitel Melbourne is looking for passionate and collaborative Commis Chefs to join our creative teams at Sofitel Melbourne On Collins. 
We hold a strong belief in purity and simplicity resulting in honest, clean identifiable flavours from a union of
the best produce with traditional and modern cooking techniques. Our constant focus on organic produce and
respect for nature’s elements are fundamental principles which we put to gastronomic practice every shift, every day in our kitchen.
Operating under the guidance of our Senior outlet chefs, this role is hands on preparing and producing all mise en place items for the multiple outlets including the Banquets, No35 Restaurant, In-Room Dining and/or Pastry Kitchens. 
You have completed your apprenticeship and have a passion for the culinary and/or pastry industry and are curious to grow your career at Sofitel Melbourne On Collins.

YOUR KEY RESPONSIBILITIES:

  • As Pastry chef, support and assist collaboration with multiple kitchens to produce indulgent high teas in Sofi’s Lounge, lavish dessert buffets in Conference and Catering and the premier pastry section in award winning restaurant No35.
  • As Culinary chef, support and assist collaboration with multiple kitchens to produce indulgent high teas in Sofi’s Lounge, lavish buffets in Conference and Catering  and luxurious dishes in award winning restaurant No35.
  • Assist the team in demonstrating flair to brainstorm and create new items
  • Ability to interpret event orders and deliver based on the clients needs
  • Actively promote and participate in teamwork and positive communication with the kitchen and other departments
  • Cultivate a positive work environment where learning and personal development is celebrated
  • Ensure food standards, preparation, presentation and cooking techniques are established and monitored to meet Sofitel Brand Standards guidelines
  • Ensure highest level of hygiene is practised to meet Health & Safety regulations and HACCP food preparation guidelines
  • Ensuring food safety logs and requirements are met at all times 

YOUR SKILLS AND ATTRIBUTES:

  • Trade qualified and a minimum of  2 years experience in a commercial kitchen environment is a plus
  • Experience within a restaurant or hotel environment an advantage 
  • Be able to demonstrate creativity and flair in menu and design
  • As with the hospitality industry you will be available to work various rostered shifts
  • Understanding of safety and manual handling requirements
  • Remain calm and effective in high volume work situations
  • Be a good team player; contribute to and assist co-workers without being asked
  • Flexibility to work a rotating roster including mornings or evenings, weekends and public holidays
